When Sabrina De Sousa and Alissa Wagner opened a tiny nook of an eatery on New York’s Lower East Side in 2013, they didn’t just start a restaurant—they started a subculture. Dimes (the name a sly reference to calling someone a ten) carved out a niche where California-esque health food like acai bowls and free-range bacon could co-exist peacefully, all served beneath shelves laden with the homemade salt scrubs and lip balms Alissa concocted from her apartment. A few expansions and outposts later, Dimes now includes a booming takeout business and a standalone market that sells everything from pottery and Sun Potion supplements to an insanely good-smelling cedar and neroli candle created by the duo—because, hey, why not? In Alissa’s words, “I think it’s the sum of all parts that makes Dimes an anomaly. It’s not just about the food. All elements are just as important to convey the sense of our world.” And don’t ya want to be a part of it, even when you can’t cozy up to a black rice bowl? —courtney conway
