How to Holiday When You’re Vegan

Eat This BY olivia martin 12/01/2017

When Kaleigh Shrigley and Claire Lowe aren’t devoting their creative talents to One Six Five, their playful, geometric jewelry line, and its candy-colored shop in Columbus, Ohio, they’re probably whipping-up inventive, plant-based treats—um, cashew queso, anyone? Newly vegan, the biz-partner besties have already aced a few recipes and swaps to satisfy their cravings for dairy-filled holiday classics—and they’re here to report back on their findings, all of which are sure to impress herbivores and omnivores alike at your next shindig.

FIND WAYS TO GET CHEESY

“Cheese was the hardest thing for us to give up, so we are on a constant mission to find vegan cheese options! One of our favorite secret ingredients is nutritional yeast, which sounds super weird but adds a nutty and cheesy flavor to any recipe. Blended cashews are also a great way to add creaminess. One of our favorite super-easy party recipes is vegan queso dip from a local Columbus blogger. It is always a hit!” —Kaleigh

SAY SO LONG TO SEITAN

“Kaleigh makes a mean carrot dog. You soak a carrot in a special mixture of spices and grill it, and it really tastes like a hot dog! It’s a good 4th of July trick. And jackfruit is a great substitute for any recipe that calls for pulled pork like chili. It comes in cans and has a very similar texture when cooked.”—Claire

READY YOUR RESOURCES

“There are so many great recipe sources out there, and we have been able to find a veganized version of most of our favorite foods. One of our favorite recipe blogs is Minimalist Baker, and we also love Oh, Ladycakes, especially for sweet treats. Claire loves her sugar cookie recipe, and I recently made this apple pie from scratch using Honeycrisp apples that I picked myself. For cookbooks, we like The Vegetable Butcher by Cara Mangini, a local chef and restaurant owner—it is all vegetarian and has a lot of vegan recipes as well.”—Kaleigh

SAVE ROOM FOR DESSERT

“I have a great recipe for cranberry sauce. [Ed. note: see below!] It's delicious on its own or even on ice cream (vegan, of course) instead of other non-vegan toppings like caramel sauce all year.” —Claire
